Date and Walnut Bread
Ingredients
- 1 tsp walnut oil
- 100g walnut pieces, coarsely chopped
- 200g pitted dried date, chopped
- 1/2 tsp soda bicarbonate
- 1/4 tsp salt (suggest use iodised salt)
- 175g yellow box honey
- 185mL very hot water
- 2 large eggs, lightly beaten
- 1 tsp vanilla extract
- 150g plain flour, sifted
- 75g walnut flour, sifted
Method
Preheat the oven to 190 deg C.
Coat a 1 litre loaf pan with walnut oil.
In a bowl combine the walnuts, dates, soda bicarbonate, honey, salt and add the water, stirring to blend. Add the eggs and vanilla and mix in well. Slowly add the plain flour, stirring constantly. Then add the walnut flour and stir in well. This should result in a thick batter. If too thick add a very little extra hot water. Pour the batter into the loaf pa and place it in the oven,
Bake for about 45 minutes or until a skewer inserted in the centre comes out clean,
Place on a rack to cool. Turn out of the loaf tin when cooled (at least 1 and 1/2 hours).
