- 4 sticks celery
- 1 European cucumber
- 1 medium carrot
- ½ lemon, juiced
- 2 tbsp yoghurt
- 1 clove garlic, chopped
- 8 mint leaves, finely chopped
- 3 tbsp walnuts, coarsely chopped
- Salt and freshly ground black pepper to taste
Slice celery thinly. Peel and grate carrot. Peel cucumber, cut in half lengthways and remove seeds and slice thinly.
Mix lemon juice, a little salt and pepper, yoghurt, garlic and mint. Add the celery, carrot and cucumber and toss well. Serve, sprinkling some walnuts on top of each serving. Typically this will make enough salad for 4 servings.
